Pioneering food blogger turned pizzaiolo Adam Kuban now plans to remain in NYC and open a permanent location of Margot's Pizza, his wildly popular bar pie pop-up. Last year it was announced that Kuban would head to Portland, OR to open an outpost of Paulie Gee's, and Kuban has been apprenticing at the Greenpoint pizzeria for several months in anticipation of the move. But now it appears that he will stay put.
The information came to light via Eater co-founder and current Resy CEO Ben Leventhal's personal blog. Leventhal conducted a wide ranging interview with Kuban about the early days of food blogging (Kuban started the pizza blog Slice in 2003, and went on to become founding editor of Serious Eats in 2006). The interview was conducted in March, at which point Kuban was still very much planning to head west with Paulie Gee. But in a note at the end, Kuban reveals that between then and yesterday, when the piece was published, he has entirely switched gears. He writes; "I'm actually staying in NYC to open a bar pie place now. In the very early stages — still writing my business plan." Eater has reached out to Kuban for more details. Stay tuned. Update: Kuban tells Eater that he has "No definite timeline yet," for opening the new place, but it is definitely in the works. At the moment he has to raise more capital, and then will start scouting locations.
