Fifteen years ago, chef Alan Harding was a pioneer in Brooklyn restaurants. He owned more than 12 total, including Patois on Smith Street and palled around with Mario Batali. Now, he's working as a consultant, for everyone from an ex-girlfriend to David Schneider's Oaxaca Grill and his old partner Jimmy Mamary's forthcoming Bluebird.
