Ignacio Mattos's critical darling Estela finds its way to the number three spot on Andrew Knowlton's esteemed "Hot Ten" list of America's best new restaurants for Bon Appétit this year. "That Mattos is able to coax the depth of flavors he does from just a few simple ingredients makes other chefs' overwrought dishes seem frivolous and indulgent. Remember the name Ignacio Mattos. You'll see and taste his influence on American cooking for years to come," says Knowlton.
While no other New York restaurants made the list, Tosca Cafe, the nearly century old San Francisco dive bar that April Bloomfield and Ken Friedman faithfully rescued, comes in fourth. At the very top of the list is Rose's Luxury in D.C. and Eli Kulp's Philadelphia restaurant, High Street on Market lands the number two spot.
