Talented chefs like Gavin Kaysen formerly of Cafe Boulud and Ryan Brazeal of Má Pêche are ditching New York for places like Minneapolis and Kansas City — and it's not just about space for the kids or cheaper rent. Peter Serpico, who left Momofuku Ko to open his eponymous restaurant in Philadelphia last year explains: "I'm still trying to find my voice when it comes to food…Coming to a city like Philadelphia helps with that."
