She may not yet have been tapped to be chef de cuisine but Osteria Morini sous chef Heather Pelletier has begun to leave her mark on the menu. Her first effort is a tortelli di mais ($22), a corn filled pasta topped with guanciale, and tomatoes. The dish is reportedly selling like hot (corn) cakes.
