Fabian von Hauske, the co-owner and expert pastry chef at Contra (and 2014 Eater Young Gun) is launching an occasional three-course dessert tasting menu at the restaurant's bar this week. Von Hauske, who has spent time cooking at Noma and in the pastry department at Jean Georges, tells Eater that the $20 menu will serve as "a platform in which we will be able to try some new dishes that we are working on," and will include both of the dessert options on Contra's $55 tasting menu, plus a third dish. The menu will only be available at the bar, and not every day of the week.
This week the dessert menu is up for grabs tonight, Wednesday, and Thursday. The current dishes include chamomile ice cream with strawberries and olive oil, toasted potato mousse with blueberries, and toasted buckwheat custard with caramelized grains and yogurt sorbet, but expect those to change regularly. Von Hauske warns that the menu may not be on offer every week, but promises the restaurant will post all upcoming dates for the dessert tasting on Twitter, and hopes to eventually "turn it into something bigger."
