He also notes the restaurant's under-the-radar but excellent cheese course: "[John Winterman]'s a cheese person. He sources that which is obscure, and he occasionally smuggles some in, the most admirable of all victimless crimes. Most of his cheeses are local...but Winterman recently returned from Montreal with cheese in his trunk — 'sandwiches,' he told the customs inspectors." [GQ]
