Mads Refslund Debuts Vegetarian Tasting Menu at Acme

Danish chef and Noma co-founder Mads Refslund is launching a vegetarian tasting menu at Acme. The nine-course menu includes dishes like chilled carrot soup with gooseberries and summer flowers, fermented corn flat bread, gnudi with sweet green peas and sour grapes, and Johnny cakes with grilled cactus and mushrooms. The $65 dinner (not including drinks and tip) is available nightly and must be ordered by the entire table. For non-vegetarians, the restaurant also offers a $75 "chef's selection" menu of five or six courses. Update: Some of Refslund's team members at Acme are at work on Tijuana Picnic, a Latin/Asian restaurant in the former Laugh Lounge space. But a representative tells Eater that Refslund is not involved. The chef will be Alex Lopez, formerly of Kittichai.

Chilled carrot soup with goose berries and summer flowers
Fermented corn flat bread with brown butter and sea salt
Roasted padron peppers with rose petals and yogurt
Warm summer bean salad with duck egg and whey

Onions with Black currants and nasturtium
Johnny Cakes with grilled Long Island cactus and wild mushrooms
Strawberries, fresh currants and frozen creme fraiche
