It started with washing dishes at a pizza place in New Jersey called Stuff Yer Face: "When the dishes were all clean, I would go up and help the guys on the line, which is the first way to become a cook. You're not even being paid for it. You might say that some people that go into cooking today don't want the cooking job. They want the Tom Colicchio job.
