While it's now possible to sit down and get a beautiful spread of lox and all the fixings at the new Russ & Daughters Cafe, the original Russ & Daughters has been turning out its classic sandwich—a bagel with plain cream cheese and smoked salmon—the same way for 100 years. Eater National has an in-depth look at what goes into making this New York classic at the iconic Lower East Side appetizing store, from the old-fashioned cream cheese to the carefully selected bagels, to the translucently thin, hand-cut slices of fish. On a busy day, the shop can sell 150 - 200 classic sandwiches alone, plus 100 - 150 pounds of hand-sliced salmon, and doing so, fourth-generation owner Niki Russ Federman explains, turns the work behind the counter into a "dance where everyone kind of knows what the moves are."
