Hatsatouris and Pilcher to Open Moby's in Amagansett

Aussies Nick Hatsatouris and Lincoln Pilcher, who own trendy Eveleigh in L.A., and had Kingswood in the West Village, as well as Moby Dick's in Montauk and a pop up last summer in the Soho Grand, have laid claim to the space at 341 Pantigo Road in Amagansett that housed the Laundry and Spring Close House.

The restaurateurs are readying a new spot, to be called Moby's, which will feature pizzas, whole fish and meats from a wood burning oven, homemade pastas, and produce from Amber Waves and Balsam Farms. Gary King, who worked at Craft, Cookshop and Il Buco before manning the range at Moby Dick's, will be chef at Moby's which seats about 150, and has a large garden for al fresco dining. "I love Montauk and we had fun there, but we are ready to bring some life into Amagansett,'' says Hatsatouris. "There hasn't been a lot of focus on it from our realm of NY restaurateurs.'' The new restaurant should open by the first week in July.
