Aquavit's executive chef Marcus Jernmark has left his position at the Michelin-starred Scandinavian restaurant. Jernmark, who started as a sous chef at the restaurant in 2009, replaced Marcus Samuelsson as chef in 2010. Jernmark also became a partner in the restaurant, and during his tenure both the menu and the dining room of the now 27-year-old restaurant got a significant revamp. Aquavit's owner Håkan Swahn tells Eater that Jernmark left his position two months ago, and that he has been replaced by former executive pastry chef, Emma Bengtsson. Before coming to the US, Bengtsson worked at two Michelin-starred Stockholm restaurants: Edsbacka and Operakällaren. No word yet on the reasons for Jernmark's departure, or what he plans next.
