Daniel Boulud Is Looking to Buy a Bistro in Lyon, France

Daniel Boulud has lots of success, with restaurants from New York to Las Vegas to Beijing, but his real fantasy that he is trying to make a reality is to return to his home town of Lyon. "I would love to buy a tiny bistro there and I have been looking for an old place with history,'' the chef recently told Eater, adding that he plans to partner with a French chef who is currently working in London. "I want it to be only about 50 seats,'' he said. "I grew up near there and I studied there: I really dream of doing this.'' Boulud said that the bistro would have two menus; one with classics from the region, and the other with seasonal offerings. "On the classic menu I want to make dishes I learned when I was 14, like quenelles and poulet au vinaigre,'' he smiled. "But first, I have to find the space!''
