Here's a look around David Burke Fabrick, the new restaurant from the David Burke Group in the Archer Hotel. There's an open kitchen in the main dining area, plus a catwalk that leads to a wine display. The kitchen is outfitted with a wood-fired stove and a beef dry-aging room lined with bricks of pink Himalayan salt, and turns out a menu of new American dishes like avocado panna cotta, lobster bolognese, and lamb chops and ribs vindaloo. Other menu items with more impenetrable names include "Skin and Bones" and "Sticks on a Salt Brick." The adjacent bar, called Bugatti, serves a more limited menu of snacks. David Burke himself has now taken a "back seat" at the David Burke Group, but did have a hand in designing the Fabrick concept and menu before he did so. David Burke Fabrick
