Three very big New York Chefs are working on restaurants inside 1 Hotels, Starwood Capital Group's new eco-focussed line of luxury hotels. As rumored, Seamus Mullen will open a restaurant in the hotel at 60 Furman St. near Brooklyn Bridge Park. Barbuto's Jonathan Waxman, a chef that's also expanding to Toronto and Nashville, will open a restaurant inside the hotel that's being built at 1414 Sixth Avenue, near Central Park. And down in Miami, Tom Colicchio will open a new project in the hotel being built in South Beach.
No word yet on the names or opening dates of these restaurants, but all of them will serve farm-to-table fare, in keeping with the green focus of these hotels. In a press release, Starwood Capital's Chairman and CEO Barry Sternlicht explains why they selected these three chefs: "Their shared commitment to offering a restaurant experience distinguished by responsible culinary practices and techniques is central to 1 Hotel's mission — celebrating nature and reminding us of our obligation to be socially responsible." It sounds like these will be brand new restaurants, not clones of other projects.
