Today, Ilan Hall reveals some new details on the Brooklyn outpost of his LA restaurant The Gorbals, which opens next month in the Williamsburg Urban Outfitters. He tells Restaurant Girl, "I've become a bit more mature and restrained with my food" for the new restaurant, though that doesn't mean there aren't some out-there dishes. Besides some classics from the LA restaurant, like bacon-wrapped matzoh balls and gribenes, highlights from the new menu include grilled lamb sweetbreads with Cool Ranch hummus, fresh tofu made with pig's blood and topped with uni, and a large format schnitzel "with the hooves still on it." The kitchen is also outfitted with a wood-fired grill, which Hall says will get plenty of use. He also promises that there will be "some approachable stuff" on the menu.
