Slice founder and longtime pizza blogger Adam Kuban is in the midst of opening a weekly pizza pop-up. He's been practicing his pizza-making at Paulie Gee's for the past year, and hosted his first pop-up for friends and family recently at Emily in Brooklyn.
The specialty at Margot's Pizza, as he calls the pop-up, is bar pizza, a thin-crusted, well-done pie found at places like Lee's Tavern in Staten Island. The working menu includes a margherita, a pepperoni, and a Midwestern-inspired pie with sausage, green pepper, and shaved red onion. It's not up and running yet, but when it does get going, Margot's Pizza will pop up at Emily on "the occasional Tuesday evening," when the Clinton Hill newcomer is closed.
