Emily and Melissa Elsen, the expert pie-bakers behind Four & Twenty Blackbirds, are planning to open a gigantic new outpost in Gowanus. The 3000 square-foot space at Third Avenue and Sackett Street will have room for more ovens and more pies, plus an outdoor dining area, a rooftop herb farm, a retail area selling pie-making equipment and other kitchen items, and a cafe that will eventually serve soups, sandwiches, beer, and wine. The Elsens will also host classes, and plan to use the kitchen as a training facility for new employees.
The sisters say the new place will have six ovens to the original's one, plus refrigerators, which will allow them to offer more variety and, for the first time ever, cream pies. They hope to open their massive pie emporium by the end of August, and tell Grub Street that they have no plans to close their original tiny Gowanus storefront when they do. If anything, they hope to open one or two more shops elsewhere in Brooklyn somewhere down the line.
