Katy Sparks's menu for the new Tavern on the Green has ceviches, Serrano ham, a roasted half chicken, braised lamb shank with creamed chards, a $54 New York strip, and an $18 burger. The chef tells Grub Street: "My ego will be gratified by people thinking the food is delicious, rather than it represents unusual ideas." Most entrees are priced in the mid 20s.
