Floyd Cardoz's last day at North End Grill be April 30. Somewhere down the line, he wants to open an Indian restaurant in New York, but before he does that, he will probably help a former co-worker open something overseas. The chef tells Flo Fab:
I am interested in opening a restaurant in India...An employee at North End Grill has gone back to India and is working on a space in Bombay to open something in the next six months. I hope to work with him. But I do not intend to move to India.The chef also notes: "Indian food is not well represented in New York, or the United States for that matter...Why can't it be made as popular as Chipotle?" A fast-casual Indian restaurant from Floyd Cardoz would be something to get excited about. He made some killer breads at Tabla, after all, and the man knows his spices. But maybe he wants to open something more formal. Only time will tell.
