The Maccionis have made the call: Raphael Francois, formerly of London's two Michelin star restaurant The Connaught, is the new executive chef of Le Cirque. Although the Le Cirque job inevitably involves cooking the classics, Mr. Francois plans to switch things up a bit where he can. The chef tells Flo Fab: "You will find elements of Belgian and especially northern French cooking, which you do not see so often in New York." His new menu will be introduced in the coming months. Sirio began looking for a replacement for former chef Olivier Reginensi after the restaurant's one star review in 2012.
