Enrique Olvera Wants to Open a Brooklyn Tortilleria

Details are starting to trickle in about Cosme, the highly anticipated Flatiron District restaurant from acclaimed Mexican chef Enrique Olvera. This will be a more casual affair than his forward-thinking Mexico City establishment Pujol, but Olvera is not planning on taking any shortcuts at his New York restaurant. The chef tells Food Republic:

We're going to open a tortilleria in Brooklyn. We have a little space and are going to make tortillas and ship it to the restaurant. This guy from Blue Hill at Stone Barns is doing fair trade corn in Mexico. As in, he's planting corn in Mexico and sending it back to America.
Olvera says that he plans to serve things like tortilla soup and chiliquilla with burrata, but the restaurant will also offer chips and guacamole because, "You pay your rent with the margaritas and guacamole." Alex Stupak apparently gave him the advice about the guacamole. If everything goes according to plan, Cosme will open this June.
