An Inside Look at the Pizza Operation at Roberta's

The Roberta's team just released a video about their philosophy on pizza making. They care about the tiny details like how the dough is stretched, how to calibrate the sauce and oil to different toppings and how to move a pizza around in those extremely hot ovens. Lauren Calhoun, the head pizzaola, has this to say about the pies that come out of Roberta's: "You have to address the comfort somebody wants from the food and, at the same time, steer them in a different direction."
