Momofuku Ssäm Bar's executive chef Matthew "Rudy" Rudofker has confirmed to Eater that the triumphant return of the Ssäm will be a permanent feature on the lunch menu, for the foreseeable future. The "O.G. Momofuku ssäm" stuffed with pork shoulder, hoisin, black beans, and kimchi will be available seven days a week, with two additional varieties available during weekday lunch service.
