WEST VILLAGE — Barbuto's 10th anniversary dinner on February 11 sold out so fast, the team has added a couple more dinners. On February 10 Jonathan Waxman will team up with Tom Colicchio and Marc Vetri to cook a four-course meal for $150 per person, and on February 12 all the Barbuto classics, like that essential roast chicken, will be served al la carte. Reservations for the first dinner can be made by emailing the restaurant. [EaterWire]
FORT GREENE — The team behind Cómodo are opened a new restaurant called Colonia Verde on Dekalb Avenue. It will serve a Latin American menu of food cooked over a wood-fired grill, plus a few dishes from the Comodo menu like lamb sliders. The new restaurant is slated to open February 18. [GS]
HANGOVER OBSERVATIONS — The Daily Meal's editorial director Colman Andrews and Esquire restaurant man John Mariani debated the value of "culinary technology" last night, and Eater National has the recap. The anti-molecular gastronomy Mariani argues that avant garde cuisine has little influence on the evolution of cooking, but Andrews points out that even Chipotle uses sous-vide cooking. [~EN~]
