On March 10, chefs Mario Batali, Gabrielle Hamilton and Wylie Dufresne together with author Bill Buford will be panelists discussing "what we talk about when we talk about being a chef" at The Drawing Center. Peter Meehan will be the moderator, and the event will be hosted by MAD, chef René Redzepi's not-for-profit organization dedicated to improving the restaurant trade. The free form discussion will trace the "evolution of the cooking profession over the past two decades," and aims to create an "intimate environment and open forum in which the panel and audience can engage" each other.
The event is part of MAD Mondays, a regular series of panel discussions focusing on the future of food, This is the first such event held outside Copenhagen, Denmark, the organization's home. As with all MAD Mondays events, the tickets are free but seating is limited and can be obtained, via the MAD website on March 3, when registration commences.
