David Waltuck, the chef and owner of dearly departed Tribeca trailblazer Chanterelle, is planning to open a new restaurant called élan in the old Veritas space later this year. George Stinson, the former GM of Chanterelle, is a partner in this new project, and he will be running the dining room as well. Waltuck tells Eater: "It will be my food (I'm not fond of labels, but I guess you could call it contemporary cuisine rooted in classic French technique) in a space that's stylish and full of energy; in short a place that has élan."
Since the shuttering of Chanterelle in 2009, Waltuck has consulted on a number of restaurants, but this will be his return to the scene as chef/partner. If everything goes according to plan, élan will open in a few months.
