Since leaving his family's restaurant, La Grenouille, amid brotherly conflict, Charles Masson has been hard at work on a new French restaurant in the Baccarat Hotel with Ciano alum Shea Gallante. Now, six months later, the legendary maitre d' has a name and an opening date for his Midtown restaurant: It will be called Chevalier, and it's slated to open in February.
There's not much more detail than that at the moment, but expect a menu of updated French classics in a luxe space (there's a lot of crystal involved). Early on, Masson promised that this would be "a younger, friskier little sister to La Grenouille."
