Enrique Olvera Is Breaking Out the Caffeine and Meringue Bombs for the Final Cosme Push

Caffeine direct from Mexico, dessert, and more ceviche testing.

Recipe testing is still underway in the cosmos of Cosme and it's now being fueled by caffeine direct from Mexican espresso company Buna. Looks from Instagram like the roaster may have created a special blend for Cosme.

Perhaps that could be paired with this bursting meringue bomb filled with some sort of cream:

The main menu still isn't finalized, but plates of raw fish continue to grace chef Enrique Olvera's Instagram account. The latest was posted with no description, but you get the idea:
