A Day in the Life of Josh Capon in 33 Photos

The chef behind Lure, El Toro Blanco, and Burger & Barrel let Eater follow him around for a day with a camera. From taking his kids to school, to tasting white truffles, to working on his new restaurant, here's what he got up to.

Josh Capon is a busy man with two children and three restaurants (and another opening soon). He starts his day by having breakfast with his family before taking the kids to school. Then he heads down to Burger and Barrel to shoot a video for Zagat, and after purchases white truffles from a visiting purveyor. Next, he heads over to Lure to meet with his partner John McDonald. After the meeting, the partners walk over to their new restaurant Bowery Meat Company. They take Lure's current chef Paul DiBari (who will move to BMC when it opens) and pastry chef Katy McAllister to survey the kitchen.

The remainder of the afternoon sees the chef recipe testing for Bowery Meat Co., doing a wine tasting at Burger and Barrel, and going over the evening's specials back at Lure. He then heads out to El Toro Blanco for an office meeting, but not before calling to wish his children a good night. He finishes his evening back at the line at Lure.
