Here's the Menu for Bowery Meat Co., Featuring Foie Parfait, Duck Lasagna, and Plenty of Steak

John McDonald and Josh Capon are gearing up to open their latest projectBowery Meat Company (some might call it the meaty counterpart to their Lure Fishbar), this Thursday. They've been in recipe testing mode for a while now, but executive chef Paul DiBari will be whipping up trial run dinners this weekend in preparation for the debut. McDonald and Capon, who are also partners in El Toro Blanco and B&B, have planned a healthier version of a steakhouse, offering market driven salads and lots of veggie sides along with Diamond Creek Ranch beef, and Colorado lamb. Yes, you can start with foie gras parfait, but there's also cauliflower steak on the menu, and the onion rings served as a side come grilled, not fried. It has some Italian leanings too, with dishes like oxtail arancini. Take a look at the full opening menu:
