José Ramírez-Ruiz and Pam Yung's hit pop-up Chez José will go full on brick and mortar as Semilla this Friday in the newly renovated old Lake Trout space. There's no fixed menu, but the $75 vegetable heavy prix fixe may include dishes like grilled matsutakes with charred pear, and kabocha squash pureed with anchovies. The pair, who are also partners outside of the kitchen, tell Grub Street they want the place to feel "like coming over [to] our house for dinner. There should be an element of surprise." The space seats 18 people around a bar, allowing diners to watch the chefs and chat about the food during the meal.
