Seafood master Dave Pasternack (Esca) is teaming up with LDV Hospitality (Scarpetta, American Cut) for a new Italian fish restaurant in the old Promenade Des Anglais space called Barchetta. The Times reports that Pasternack is not leaving Esca. His current chef de cuisine, Christian Georner, will run the kitchen at Barchetta day-to-day. The chef tells Flo Fab: "Alain Allegretti put in a great kitchen, so I don't have to touch that...I've also kept the white marble bar, but we're gutting the dining room."
Pasternack opened Esca with Joe Bastianich and Mario Batali 14 years ago, and he also created the seafood restaurant at Eataly. If everything goes according to plan, Barchetta will open in March.
