New York's first customizable sushi joint called Pink Nori will be opening next week in Astoria. The mix and match idea was thought up by Jesse Tang who won $10,000 at the Long Island Young Entrepreneur Challenge and decided to use the money to fund this project. Diners will be able to create rolls from standard sushi ingredients as well as more nontraditional fare like potato chips, guacamole and jalapeños. [NYDN]
