Preston Clark is no longer working as the executive chef at Resto, the excellent meat-centric restaurant on East 29th Street. Restaurateur Christian Pappanicholas tells Eater that the chef has "moved on to pursue other things and spend more time with his family." Clark became a part of the team about a year and a half ago. Right now, Francis Derby, the chef at adjoining sister restaurant The Cannibal, is also overseeing the Resto kitchen.
The team recently opened a counter-version of The Cannibal inside Hell's Kitchen's hot food hall Gotham West Market. Francis Derby's menu at this new venture includes all sorts of sausages, cheeses, and charcuterie items, as well as vegetable dishes and a few large plates. No word yet on who will replace Clark at Resto.
