Just outside of Chicago proper, Found Restaurant graces the suburb of Evanston with farm-driven, approachable American fare. The restaurant is helmed by Amy Morton, who after a 14-year break from the restaurant industry decided to bring executive chef Nicole Pederson on board and give her own place a go. The space—reminiscent of a 1920's Paris salon—is a composition of found furniture and objects sourced by Morton herself.
Hit play on the view above to find out why it was Morton's best decision to open in Evanston, and how the two have proven that you can run an important, celebrated restaurant outside of Chicago.
