Welcome back to Sietsema's Secrets, a new Eater Video series that takes readers inside the kitchens of the city's best ethnic restaurants.
The pitas at Gazala's Place in Hell's Kitchen are cooked on an unusual domed contraption, and they're larger and thinner than what you'll find at most other Middle Eastern restaurants. In the clip above, Sietsema explains: "The pitas are characteristic of a Middle Eastern religious and cultural group know as the Druze. Chef Gazala Halabi is a member of the ancient tribe." Hit play to see Halabi make this delicious bread as well as the small beef and lamb sausages called kafta.
