Chris Cipollone is introducing a new four-course tasting menu at Piora on January 20. The $75 menu will include new dishes like sweet potato with smoked cashews, maple and duck cracklings, plus old standbys like black garlic bucatini, with optional wine pairings for another $45. In order to gear up for the new menu, and take a breather from its first busy months, Piora will be closed from January 12 through 19. [EaterWire]
