Herit and Stafford-Hill Team Up to Open Wallflower

Xavier Herit, who spent seven years as the head bartender at Daniel, will open his own bar in the West Village later this month. Wallflower, he tells Grub Street, will be "a neighborhood bar," with 45 seats and a menu of seasonal cocktails.

Jared Stafford-Hill, who left Maison Premiere nine months after transforming it from a bar into a full-fledged restaurant, is also on board at the new bar. His largely French menu will include some big plates as well as charcuterie and raw bar items.
