Watch Chef Susana Morina Make Tortillas at Suenos

Welcome back to the Eater's Moving Pictures feature A Shift With. Here we will bypass the famous chefs, the oft-interviewed restaurateurs and GMs and try to shine a light on the individuals in the restaurant industry who perform their duties outside of the public eye. Meaning the meat smokers, the in-house butchers, the bread bakers, the dim sum chefs, and the florists.

The series continues today at Sue Torres's excellent Chelsea Mexican restaurant Suenos, where chef Susan Morina makes tortillas in the dining room. These are absolutely some of the best tortillas in New York City. Hit play on the video above to see Susana grind the corn, press the tortillas, and cook them on the grill — on a busy day, she makes about 600 of them.
