At the first-ever Taste Talks conference in Williamsburg this weekend, Mario Batali and Wylie Dufresne discussed the interesection of art and commerce with artist Jennifer Rubell and musician Questlove. On commerce, Batali says: "As chefs, we think about the commerce all the time ... you can tell immediately if something you made was appreciated by the customer by the empty plate that returns to the kitchen ...
