Sant Ambroeus restaurateurs Gherardo Guarducci and Dimitri Pauli have tapped The Standard Grill's Dan Silverman to helm the new restaurant in the Loews Regency Hotel on the Upper East Side. Flo Fab reports that Silverman will be cooking Italian food at this new restaurant, which is slated to open at the end of the year. Silverman explains: "I like simple food with a Mediterranean influence and bold flavors." No word yet on who his replacement will be at The Standard Grill. The Loews Recency is famous for its power breakfast, and Silverman will be in charge of that as well as the lunch and dinner menus. The new restaurant does not have a name yet.
Before opening The Standard Grill in 2009, Silverman worked at Alison on Dominick, Union Square Café, and The Lever House.
