Various reports cite commissions ranging from 5 percent to 15 percent, but Pedro Muñoz, the owner of Luz in Brooklyn, recently told Bloomberg he pays a 14 percent commission on every order, and that the company's 30-day payout schedule has left him waiting for up to $20,000.
