As his follow-up to Veritas, chef Sam Hazen is teaming up with Matt Shendell and Brian Mazza of Paige Hospitality for an American restaurant in the Gansevoort Hotel called The Chester. The new project will occupy the same massive indoor/outdoor space that once housed Tanuki Tavern and Toy. Hazen and his crew will also handle the room service and banqueting for the hotel. The Chester is slated to open early next month.
The chef is still working on the menu, but expect things like crudo plates, a crispy pork shank, a brined pork chop, and an aged steak for two. Sam has worked in some amazing restaurants, including La Cote Basque and the Quilted Giraffe, and his time at Tao presumably taught him a thing or two about doing high-volume restaurants that mix dining with nightlife. Once The Chester opens, Hazen will split his time between the new restaurant and Veritas.
