Restaurateur Christian Pappanicholas sends word that Francis Derby, formerly of Tailor and Momofuku Ssam Bar, is now the executive chef of The Cannibal. Chef Preston Clark was overseeing the kitchens at The Cannibal and sister establishment Resto for the last year, but now he will just focus his energy on Resto.
In addition to working at the 29th Street restaurant, Derby will be the chef at The Cannibal's new location in the forthcoming Gotham West Market in Hell's Kitchen. Pappanicholas tells Eater: "Fran has been a great friend of ours and we are very happy to have him on board. Preston, Cory [Lane] & Francis have worked together for years and it was very much a collaborative decision."
