A former apprentice of Jiro Ono (the subject of the documentary Jiro Dreams of Sushi), will be the chef at Sushi Nakazawa, an omakase restaurant opening soon in the West Village. For those who watched the movie, Daisuke Nakazawa was the senior apprentice who spent three months learning how to make tamagoyaki, the Japanese omelette. After 11 years under Jiro's tutelage, he moved to Seattle last year to work with another Jiro protégé at a place called Shiro's.
Now he is at the helm of Sushi Nakazawa, which will serve omakase tastings paired with sake. The New York Times reports that the restaurant's 10-seat sushi bar will open Monday, with the full dining room to follow in September.
