Fredrik Berselius by Daniel Krieger

Aska, chef Fredrik Berselius's Nordic-influenced restaurant in Williamsburg's Kinfolk Studios, is the only New York City restaurant to land on Andrew Knowlton's coveted "Hot Ten" list for Bon Appétit this year. Mr. Knowlton writes: "Whether you like it or not, his food makes you think, not just about your own dining habits, but also about flavor combinations, textures, and, most important, the act of eating." In a video accompanying the list, Mr. Berselius goes foraging for herbs and berries in the Hudson Valley.

Alma, the Los Angeles restaurant from Ari Taymor, nabs the number one slot, while Joshua Skenes's Saison reboot in San Francisco comes in at number two.
