The new restaurant in the works from Bobby Flay and business partner Laurence Kretchmer will not be an exact revival of Flay's three-star Spanish restaurant Bolo after all. That was what it originally looked like it would be when the pair applied for a liquor license last year using Bolo as their working title. But now, Gael Greene reports that the name of the 147-seat spot at 324 Lafayette Street has been changed to Gato, after a cat that wandered by the first time Flay looked at the place.
While Bolo, which closed back in 2008, focused entirely on Spanish food, Gato will have a mix of both Mediterranean and Spanish dishes on the menu. Although they were initially shooting for a 2013 opening, now the restaurateurs think that Gato will open in early 2014.
