And here's Alan Richman on the grilled scallop at Neta: "At Neta, the sushi restaurant of Nick Kim and Jimmy Lau, course number four was a buffet on a scallop shell—the grilled shellfish, plus uni, maitake, seared foie gras, wild parsley, all of it enhanced with soy-garlic butter. When you're served sushi, you get fish. When you're served this dish, you get it all." [GQ]
