For his Greasy Spoons Week special, chef Owen Clark of Williamsburg hot spot Gwynnett St. decided to make a version of a BLT. The chef is using homemade bread that's fortified with vegetable ash, plus heirloom tomatoes, smoked mayonnaise, and strips of guanciale. The sandwich comes with a side of tempura-fried pickled wax beans. It's available from now through Sunday for $12. Hit play on the video above to see chef Owen make his modern version of the BLT.
